Baking from scratch

I find that I am lucky that during the week my schedule is usually open enough that I can find the time to cook from scratch. I enjoy trying out new recipes on my family, and I like it even more when the recipes are a success. I have a hard time finding good baking recipes. Maybe I am a baked goods snob, but I rarely think the healthy version of baked goods compares to the refined sugars and processed junk food goods. Today however I made something good.

I went to that 100 Days of Whole Foods blog and found a recipe for zucchini bread. I checked out the ingredients and made one small substitution. I used 3/4 cup applesauce instead of the oil. As the bread was baking the house smelled delicious and when it came out of the oven it tasted wonderful. It is not nearly as sweet as most zucchini bread recipes but my girls ate it right up without any complaints. My eldest even asked for seconds.

Now I'm on the hunt for a tuna noodle casserole recipe. My eldest loves the tuna helper but it's so overprocessed, I need to find an alternative that she will like. I also need to find an alternative for the kraft mac & cheese but so far every homemade mac & cheese I've made the kids have shot down. This would be a little easier if I didn't have two super picky eaters in our house. lol.
